Sweet Potato Pie

In my not so humble opinion this is the perfect sweet potato pie. Show up your grandma this holiday season! I believe the secret to this pie is going way heavy on the spices. I'm talking fresh ginger, fresh nutmeg, cardamom, all spice and of course cinnamon.
Ingredients
- 2 medium Sweet potatoes (how many grams?)
- Graham cracker pie crust (recipe)
- 1 tsp cinnamon
- 1/2 tsp freshly grated nutmeg
- 1/2 tsp all spice
- 1/4 tsp cardamom
- 113 grams or 1 stick butter
- 1 tsp kosher salt
- 2 eggs room temp
- 100 grams brown sugar
- 100 grams of white sugar
- 1 teaspoon vanilla extract
- 1 vanilla bean (optional)
- 1/4 teaspoon fresh ginger
- 1 Tablespoon flour
- 1/2 cup heavy cream
- 1 Tablespoon Lemon juice
Steps
- Make pie crust
- Preheat oven to 425 degrees
- Poke holes in sweet potatoes
- Bake for 45 mins to an hour until sweet potatoes are very tender
- Scoop out sweet potato flesh into a bowl
- Add butter, cinnamon, nutmeg, all spice, cardamom, salt, sugars, vanilla, ginger, heavy cream, flour, and lemon juice.
- Give it a taste and then add the eggs
- Preheat oven to 350 degrees and bake for 55 mins
- Let cool and serve or move to fridge
