Sweet Potato Pie

In my not so humble opinion this is the perfect sweet potato pie. Show up your grandma this holiday season! I believe the secret to this pie is going way heavy on the spices. I'm talking fresh ginger, fresh nutmeg, cardamom, all spice and of course cinnamon.

Ingredients

  • 2 medium Sweet potatoes (how many grams?)
  • Graham cracker pie crust (recipe)
  • 1 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp all spice
  • 1/4 tsp cardamom
  • 113 grams or 1 stick butter
  • 1 tsp kosher salt
  • 2 eggs room temp
  • 100 grams brown sugar
  • 100 grams of white sugar
  • 1 teaspoon vanilla extract
  • 1 vanilla bean (optional)
  • 1/4 teaspoon fresh ginger
  • 1 Tablespoon flour
  • 1/2 cup heavy cream
  • 1 Tablespoon Lemon juice

Steps

  1. Make pie crust
  2. Preheat oven to 425 degrees
  3. Poke holes in sweet potatoes
  4. Bake for 45 mins to an hour until sweet potatoes are very tender
  5. Scoop out sweet potato flesh into a bowl
  6. Add butter, cinnamon, nutmeg, all spice, cardamom, salt, sugars, vanilla, ginger, heavy cream, flour, and lemon juice.
  7. Give it a taste and then add the eggs
  8. Preheat oven to 350 degrees and bake for 55 mins
  9. Let cool and serve or move to fridge
